From Farm to Table
July 21, 2010Chef Earl Hook of Meriwether’s Restaurant creates each dish to reflect a “farm to table” approach with a Pacific Northwest menu. Each dish includes fresh produce from their very own farm called Meriwether’s Skyline Farm.
About two and a half years ago, Meriwether’s took the initiative to create and operate their very own 5 acre vegetable farm located at the apex of Skyline Boulevard in Portland. The elimination of a middle man between the produce and the chef was of great importance to Meriwether’s. Not only would Meriwether’s know exactly where their produce was coming from, they would also be able to promote the strict organic qualities of their food to their diners.
Skyline Farms has completed 2 full harvests, providing the restaurant with over 8,000 pounds of produce. “What are they growing?” you may ask. Here is just a taste of the well over 40 varieties of produce they harvest:
Arugula, Kale, Breakfast Radish, Hakurei Turnip, Merlin Beets, Lettuce, Magda Squash, Green Garlic, Fennel, Carrots, Cabbage, Cauliflower, Strawberries, Snow Peas, etc.
Skyline Farm offers complimentary wine and cheese tours, introducing guests to the farm, its crops and mission. Enjoy wine and cheese tasting from local purveyors with friends in a picturesque rural setting just minutes from Portland.
